Got the workweek lunch blues?

Are you so sick of that turkey sandwich you bring every day that you are ready to toss that bad boy out? Are you done spending money on take-out? Does the workweek lunch hour got you feeling down?

If you answered yes to any of the questions above, it is likely you have a case of the workweek lunch blues.

For myself, I can get stuck in lunch time meal ruts. There have been times where peanut butter and jelly has made a regular appearance at the clinic. While I love me some pb & j, a girl gets bored after a while! I want to keep it healthy, fresh, and easy. That’s why lately I have been trying out some different lunch salads. Taco Salad + Black Bean & Avocado Nachos

There are two things you should know about me if you haven’t figured them out already.

#1. I love Mexican food. I will never get sick of any combination of black beans, salsa, and avocado. You can find supporting evidence here and here.

#2. I hate allowing food to go to waste. I will always attempt to use leftovers in a variety of ways.

Last weekend, I was fending for myself for dinner. Steve went back home to Buffalo so this chica had the apartment all to herself! I was looking for something quick and easy that would last me a few meals. I also had a craving for salad…probably because my lunch that day consisted of a filling vegetarian Reuben from City Feed. I needed some balance.

Eat Right With Color

March is National Nutrition Month! A month that is recognized by the American Dietetic Association to help promote and campaign for good nutrition – adopting healthy eating patterns, making good quality food choices, and creating healthy lifestyle behaviors. March 9th was the fourth annual Registered Dietitian Day so I hope you showed that special RD in your life some extra love.

The theme of this year’s National Nutrition Month is Eat Right With Color. I love this theme because I think it is so important to not only eat right but to be aware of the variety of foods in your diet, specifically with fruits and vegetables. Happy Registered Dietitian Day!

Its March 9th people. Bust out your kazoos, party hats, streamers, balloons and other standard party paraphernalia because it is the best day of the year and we need to celebrate!

3/9 never used to resonate with me. It was just another day of the year. Well that all changed as of last October when I became a Registered Dietitian!

Happy Valentine’s Day!

I hope you all had a day full of love for yourself and those closest to you. Tonight, Steve and I will be celebrating at Wine Tasting Tuesdays at Ten Tables JP. Four courses and four wine pairings for $42. Can’t wait to share with you all the delicious food and wine we indulge in!

Over the weekend, I displayed my love for the art of cooking by attending a Knive Skills cooking class at Artepicure Cooking School hosted by the Massachusetts Dietetic Association. My friend Michelle and I ventured to Somerville together to improve upon our non-existent knive skills.

Enter Artepicure. Owner Mark DesLauriers uses his very own kitchen in his loft apartment to host cooking classes. I could not imagine eating in this charming kitchen on a daily basis!
