Happy first day of Fall! I’m always a little hesitant as we wind down the last few days of summer to really start embracing fall produce. I think I like to hang onto summer produce (and visions of beaches, pool parties, summer vacations) up until the very last second. But this year I came around a little early to apples.

I like to think of apples as the gateway fall produce – you start with apples, then before you know it, you’re onto pumpkin, and then some serious butternut squash, and by then you’re hooked onto fall (aside: I blame my newfound obsession with Breaking Bad for my drug analogy there). 🙂

I’m obsessed with apples and nut butters. Peanut, almond, cashew. Love ’em all on apples. It’s the perfect afternoon snack – fiber, protein & healthy fat. What more can you ask for?

Oh, an apple dip to officially kick of fall and all its gloriousness? I gotcha covered.

I loved caramel apples as a kid so I wanted to combine my favorite “adult” apple snack with my favorite kid-friendly dessert. Hence an apple dip sweetened with salted caramel and made creamy and delicious with Greek yogurt and peanut butter.

Salted Caramel Peanut Butter Apple Dip

  • Yield: 1 cup

Description

A creamy apple dip fit for fall made with just three ingredients: Greek yogurt, peanut butter, and salted caramel.


Ingredients

For the Salted Caramel:

  • 1 cup granulated sugar
  • 6 tbsp unsalted butter
  • 1/2 cup heavy cream
  • 3 pinches Maldon sea salt flakes (or any course sea salt)

For the Apple Dip:

  • 7oz 2% Plain Greek yogurt
  • 2 tbsp all-natural unsalted creamy peanut butter
  • 3 tsp salted caramel sauce
  • Extra salted carmel sauce to serve

Instructions

For the Salted Caramel:

  1. In a medium saucepan, add sugar over medium heat. Whisk frequently once sugar begins to melt. The sugar will begin to form lumps but keep whisking until the sugar melts down completely and all the lumps disappear.
  2. Once the sugar has completely melted, add the butter, and whisk until completely melted.
  3. Remove from heat and add the heavy cream, whisking until combined.
  4. Let sit and cool for at least 15 minutes before transferring to a jar.

For the Apple Dip:

  1. In a bowl, stir yogurt, peanut butter, and caramel until completely combined and creamy consistency. Drizzle extra salted caramel on top before serving.
