I’m quickly learning that being a homeowner is basically a full-time job. There is SO much to do and just not enough time in the day. I’m feeling physically and mentally exhausted and most days I barely have the energy or time to make dinner. And I’m also really grateful for the privilege to be able to own a condo in Boston. Trying to hold space for both.

But since I’ve been zapped for energy, I’ve been looking for quick and easy dinners that don’t require a ton of time in the kitchen. Enter this sheet pan dinner. Now that it’s summer (officially tomorrow!), I’m starting to crave all things barbecue. To me nothing says summer like BBQ.BBQ salmon with sweet potato and green beans

We eat a ton of salmon in our house. We really like seafood and salmon feels really hearty to me compared to some other white fishes. Plus, omega 3-s in the HIZOUSE. Omega-3s are great for heart health and brain health. When I was suffering from post concussive syndrome last year, I ate so much salmon (and took omega 3 supplements too).

Sheet Pan BBQ Salmon Dinner

A quick and easy weeknight meal, this Sheet Pan BBQ Salmon Dinner is perfect for the summer when we’re craving BBQ but want minimal clean up!

Ingredients

  • 1 lb. salmon
  • 1/4 cup BBQ sauce
  • 2 small or 1 large sweet potato, cut into wedges (about 20 wedges)
  • 3 tablespoons olive oil, divided
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon chipotle powder
  • Salt and pepper, to taste
  • 1 lb. green beans, trimmed

Instructions

  1. Preheat oven to 425 degrees F. Line a baking sheet with parchment paper.
  2. Brush salmon with BBQ sauce on all sides. Set aside.
  3. In a medium bowl, add sweet potato wedges, 2 tablespoons olive oil, chipotle powder and chili powder. Season with salt and pepper, to taste. Toss together to evenly coat.
  4. Spread sweet potato onto baking sheet.
  5. Toss green beans in the same bowl with remaining 1 tablespoon olive oil and season with salt and pepper, to taste. Toss to evenly coat. Spread out onto baking sheet, saving room in the middle for the salmon.
  6. Bake at 425 degrees F for 10 minutes. Lower oven to 300 degrees F.
  7. Add salmon onto baking sheet and continue cooking until salmon is flaky and reaches an internal temperature of 145 degrees F, about 20 minutes.
  8. Evenly portion out salmon, sweet potato wedges and green beans.

    We made this for dinner last night and thought it was delicious! We found that it took a little longer than 10 minutes to cook the vegetables. Also, it took a much shorter time to cook the salmon after we lowered the heat to 300 degrees. We don’t like our fish overcooked. It was a great combination.
