You know it’s the end of summer when you eat tomato salad everyday. My Easy 5 Ingredient Tomato Salad takes less than 5 minutes to make. The perfect light and fresh end-of-summer appetizer. Hope you all had a wonderful long labor day weekend. I basically did what I said I would in a previous post which was spend all my days at the beach and eat my weight in tomatoes.
I cannot have enough tomatoes right now. We’ve been getting pounds and pounds of them every week from our CSA and you would think that I might not be able to keep up with them. That I might have to take to canning or freezing sauce in order to not waste one tomato bite. But I just make tomato salad every day and we’re fine. Okay, maybe not every day but we did buy a basil plant just to keep up with the amounts of tomatoes and mozzarella we’ve been eating. I wanted to share this recipe with you to show you just how easy healthy recipes can be. Healthy does not have to be complicated. Healthy does not mean the latest superfood powder. Healthy means fresh. whole. real. And that’s what this salad is.Plus, it literally took me under five minutes to make and I was like I hope everyone knows just how quick it is to whip up a tomato salad. Because if you don’t, you’re missing out on nature’s candy here. This recipe only calls for 5 ingredients: cherry tomatoes, garlic, basil, balsamic vinegar, and olive oil. And everyone loves a good tomato salad so make this as a starter or side for your next family dinner or bring it to your next social gathering. Potluck, anyone? I just made a version of this for a friend’s party last weekend using beans and fresh oregano instead of basil. Mouthwateringly good.
- 1 cup cherry tomatoes, halved
- 1 clove garlic, minced
- 5 basil leaves, chopped
- 2 tsp balsamic vinegar
- 1 tbsp olive oil
- Salt and pepper to taste
- Combine tomatoes, garlic, basil, balsamic vinegar and olive oil and toss together to combine and coat.
- Salt and pepper to taste.
- Serve immediately or store in the refrigerator and let reach room temperature before serving.
