I hope you’re enjoying time with your loved ones, curled up by the fireplace, opening presents, listening to Dean Martin or Frank Sinatra, and sipping on some eggnog. And in the slight chance that you take a break from that picture perfect scenario to read this blog post, hi and thank you!Cheesecake was my favorite kind of cake growing up. In fact, every year on my birthday, my family would get two cakes – a yellow or chocolate cake for the normal birthday party goers and a mini cheesecake for moi. And the holidays weren’t any different. While everyone would be noshing on holiday classics like apple pie and Christmas cookies, I was digging into that cherry cheesecake. So, I’m bringing cheesecake back to the holidays with a seasonal gingerbread version.
These mini cheesecakes are perfectly portioned, super easy to make, and don’t require an oven. I used Neufchatel cheese, which contains 1/3 less fat than cream cheese, and low-fat Greek yogurt for the creamy, better-for-you filling.Serve these up at the holidays alongside your holiday cookie platter and they’re sure to be a hit.
