Hope you all had a fantastic fourth of July! Steve and I had a really nice weekend just the two of us as most of our friends were out of town for the holiday. It was quite perfect because we were celebrating our official two month countdown before “I do” and because we won’t be spending much QT together these next couple weeks as I leave for my Switzerland trip on Friday. We stuffed and sent out our wedding invitations on Friday night, which I was super happy with how they turned out. Steve also created this super cute little “evening picnic” at home complete with rose and chocolates. What better way to stuff wedding invitations! And this is why I’m marrying the man 🙂
Saturday, we went to the beach and spent the night dancing at one of our favorite post-beach spots, The Mile Marker. Sunday, we did lots of wedding planning and then had a delicious cookout with tons of grilled veggies, shrimp, bread and homemade romesco sauce. And then Monday we relaxed by a pool and had a picnic at night on top a nearby hill to watch the fireworks.

This weekend was super hot so I was happy to be by an ocean or pool the majority of the time. But sometimes you need a little extra refreshment to help cool you down. Like homemade popsicles. If you remember from last summer, I was on a popsicle role. I made Chai Tea Latte Popsicles, Matcha Green Tea Latte Popsicles and Roasted Peaches N’ Cream Popsicles. I couldn’t get enough of these frozen treats. This year, I’m back at it with this recipe for Mango Turmeric Lassi Popsicles. I know, I know; I’ve been on a mango turmeric kick lately with my mango turmeric overnight oats recipe but I can’t get enough of this sweet/peppery flavor combo and one-two antioxidant punch. So why not stick with a good thing when you have it, right? These Mango Turmeric Lassi popsicles are made with fresh sweet mango puree, protein-packed Greek yogurt and warming spices like cinnamon, ginger and turmeric. And don’t worry, they’re chock full of nutrients as mangos are bursting with over 20 different vitamins and minerals
