This buffalo cauliflower pizza might just be the best vegetarian pizza you ever eat. Crispy, spicy cauliflower, two cheeses, and a creamy, tangy ranch. It will make you wish every night was pizza night.
The very first party I ever held as a kid (besides birthday parties) was a pizza party. It was the summertime. We wore bathing suits, played in sprinklers, ate pizza, and drank Squeezits (or maybe it was KoolAid Bursts; either way it was a red squeezable drink that was fashionable in the 90’s). Now if that’s not the epitome of joy around food, I don’t know what is.
Imagine if you could feel comfortable today eating pizza, drinking red drinks, and prancing around in your bathing suit. For so many of us, this feels like an unattainable dream. But food freedom is our birthright. If we could do it when we were younger before we cared about body size and diet culture, who’s to say we can’t do it now? You can. That unbridled joy around food is within your reach.
Maybe you don’t go prancing around in your bathing suit and eating pizza now if you live on the East coast like me and are reading this in February when it’s published, but hey, summer will be here before you know it (hopefully) and then you can have your own pizza party. Just like the good ol’ days.
How to Make Buffalo Cauliflower Pizza
This pizza is super easy to make. I use store-bought pizza dough to save on time. Roll it out. Top it with hot sauce and olive oil, breaded cauliflower that’s been tossed in hot sauce, diced red onion, mozzarella, and blue cheese. Bake it on a pizza stone (ideally) or a baking sheet at 500 degrees F until crust is browned and cheese is bubbling, about 8-10 minutes. Remove from the oven and garnish with green onion and drizzle with ranch dressing!
Pro tip: Don’t skip the ranch. If you don’t have time for homemade ranch dressing, just use store-bought dressing. I’ve used both and it’s delicious both ways! But the ranch adds a creamy and tangy component that compliments the spicy Buffalo sauce perfectly.
Also, we have a home video of said pizza party when I was in 5th grade. It involves me doing the “walk like an Egyptian dance” and singing a song about a pizza party. Thank goodness no one has VHS players anymore ;). JK I wish I could watch it right now.
