Healthy Sweet Potato Skins

The perfect and simple game day appetizer!
Step 1:
Roast sweet potatoes whole, let cool, cut in half and scoop out the insides. Roast skins for 10 minutes. Don't forget to brush with olive oil!
Step 2:
Add beans, tomatoes, jalapenos, and sour cream to a large bowl
Step 3:
Stir mixture together with the leftover sweet potato flesh
Step 4:
Fill roasted sweet potato skins with the mixture, add cheese if you'd like. Roast for 10-15 minutes.
