- 1 (16 ounce) box yellow cake mix
- 1 1/2 sticks unsalted butter, cut into 1-inch pieces
Instructions
- Preheat oven to 350 degrees F. Grease 11×7 or 9×9 baking dish.
- In baking dish, combine peaches, brown sugar, cinnamon, and cornstarch and toss until peaches are evenly coated.
- Sprinkle cake mix over peach mixture.
- Evenly distribute pads of butter over top of cake mixture.
- Bake until topping is golden brown and juices are bubbling, about 50-60 minutes.
- Let cool on wire rack for at least 20-30 minutes before serving.
Notes
- This cobbler is delicious served warm with vanilla ice cream! Whipped cream or crème fraîche would also work well.
- Easy peeling peaches hack: Cut a shallow “X” on the bottom of each peach. Submerge peaches in a pot of boiling water for about 30 seconds, then transfer to an ice bath. Remove from ice bath once cooled and easily peel peaches using your hands!
- You can use canned or frozen peaches instead. If using frozen, be sure to let defrost in the refrigerator overnight. If using canned, be sure to drain any excess liquid before using.
