Corn Avocado Salsa (fresh or frozen corn!)

Description

This corn avocado salsa is super easy to whip up in just 10 minutes. Made with fresh or frozen corn, creamy avocado, spicy jalapeño, red onion, lime juice, cilantro and salt, it’s perfect as a snack along side tortilla chips or to pair with your favorite taco recipe!


Ingredients

  • 2 cups corn kernels (about 34 ears of corn if using fresh)
  • 1/4 cup diced red onion
  • 1 2.5 inch jalapeño pepper, minced, seeds and ribs removed if you don’t want the heat (about 2 tablespoons)
  • 1 1/2 tablespoons lime juice (from 1 lime)
  • 1/4 cup cilantro, chopped
  • 1/2 teaspoon salt
  • 12 avocados, diced


Instructions

  1. In a medium bowl, mix together corn, onion, jalapeño, lime juice, cilantro, salt and avocado until combined.

Notes

  1. This salsa is best enjoyed within 1-2 days as the avocado will start to brown after.
  2. I love this salsa paired with my blackened salmon tacos and crispy black bean tacos! It also compliments my avocado lime crema nicely!
