Easy Instant Pot Vegetarian Chili

A delicious way to eat chili in no time. This easy instant pot vegetarian chili is about to blow your mind. Chili is definitely comfort food to me. Especially when it’s slathered with cheese and Greek yogurt and tortilla chips.

And I need all the comfort food I can get right now. It hasn’t exactly been the smoothest start to the year for me. A new health diagnosis that has me back in the PT office and bad news about my new office lease for my private practice that I was super psyched about. Needless to say, I’ve had to take some time to just allow myself to feel blah these past couple weeks. In the past, I probably would’ve powered through and not let myself feel sad but last night I told Steve I just need to wallow in my grief after I called him Jack Pearson for trying to…

Luang Prabang Salad (Laos salad)

The freshest salad there ever was, this Luang Prabang salad is packed with tons of herbs and paired with a creamy sweet and sour dressing, inspired by my recent trip to Laos. One of the reasons I love traveling (and there are many) is that I always return with new inspiration for blog recipes. I love being able to bring back a taste of my adventures abroad (like my Slow Cooker Greek Baked Beans and Greek Salmon Gyros with Beet Tzatziki) and share them with you and I love the challenge of recreating my favorite global dishes in the comfort of my own kitchen. I have so much to tell you about my recent travels to Vietnam and Laos and don’t worry there will be plenty of posts to follow recapping our trip but today I’m kicking off my trips down memory lane with a favorite Laotian recipe.

It’s funny. We almost didn’t go to Laos. Originally,…

Butternut Squash Noodles Carbonara with Mushroom Bacon

Comfort food with a twist. This Butternut Squash Noodles Carbonara with Mushroom Bacon is a great way to add more veggies to your plate! This past weekend I was back in Buffalo, NY again, this time for my friend/sister-in-law’s baby shower. That’s right, in just a couple short months I’m gonna be an AUNTIE!! I’m so excited to meet my nephew and can’t wait to spoil the crap out of him :).

Whenever I go back home to Buffalo, there tends to be an abundance of heavier foods and since I would never deprive myself (because I know that deprivation doesn’t work), I indulge my cravings and move on. So after a weekend of eating things like peanut butter chocolate cake at the shower (which is my new FAV cake flavor combo, btw), doughnuts from my fav doughnut shop in Buffalo courtesy of Poppa Lydon and eggs benedict at a great brunch…

Vegetarian Buffalo Cauliflower Wing Dip

A deliciously indulgent vegetarian and nutritious spin on a classic game day appetizer, this vegetarian buffalo cauliflower wing dip is about to take your Super Bowl party to the next level. Growing up in Buffalo, New York, there are a few guarantees:

  • You will freeze every winter.
  • You will suck up freezing because that usually means at least a week off from school every winter (#SNOWDAY!)
  • You will eat your fair share of wings (in Buffalo, we call them wings, not Buffalo wings cause that’s all there is).
  • You will find Buffalo chicken wing dip at every single party and gathering you attend.
  • For a quick play-by-play on how to make this recipe, check out my video below!

I was fine with the first two guarantees and more than fine with that second one. One winter, we had an entire week off of school (5 days straight)…

    Truffle Roasted Chickpeas

Crispy, savory and totally (warning!) addicting, these truffle roasted chickpeas are the perfect snack for the afternoon snack attack! I started working a few days out of the week at a shared work space in Boston a few months ago. It’s been pretty great so far. I’ve met some cool new peeps outside of the nutrition bubble I tend to exist in, I now put on makeup and brush my hair 2-3x per week (haha), I get a nice brisk walk in in the morning, catch up on my podcasts during my morning commute (OMG, a commute! I’m a normal human being again!), and I get to eat ALL the Justin’s PB and Biena chickpea snacks that I want. Oh, and there’s a wall of tea. No joke. An entire wall dedicated to loose leaf tea. It’s like Teavana only you’re not in a mall – you’re at work. So basically, the new office space…
