Haaaaaaapy hump day!

Here’s a round-up of my eats yesterday and despite blizzard #4 hitting us on Sunday, I managed to get some real food in the house on Monday.

Breakfast

Warm water with lemon.

2 sunny side up eggs and a slice of Go Veggie cheddar cheese on a whole-wheat English muffin.

Black tea with raw honey and lemon.

Lunch

Leftover Kimchi Stew – recipe from Bon Appetit and recommended by my future sister-in-law. This was SERIOUSLY comforting and delicious. Welp, we sure got a blizzard in Boston yesterday. I didn’t mind it so much though. One, I got to stay warm and cozy and develop recipes all day. Two, Steve got to work from home too and was nice to have some company during the work day for a change (no offense, Constantine).

Breakfast

Egg sandwich on bakery bread with 2 eggs, sautéed kale, and Go Veggie cheese.

I love egg sandwiches in the morning. It’s a sure-fired way for me to know I’m starting off the day with a good source of protein and a balanced meal (I always try to sneak some veggies in my sandwich).

Happy hump day ya’ll! Last Wednesday, I gave a webinar to a group of 200 registered dietitians on the topic of social media. So I powered through the day with some serious fueled eats.

Breakfast

Apple butter and almond butter oats (made with coconut milk) with walnuts, pepitas, and chia seeds.

English Breakfast tea with lemon and local honey.

AM Snack
