In honor of St. Paddy’s Day, I’ve whipped up a superfood shamrock smoothie that’s bursting with green nutrition.
Hope ya’ll enjoyed your St. Paddy’s Day weekends! We had some friends over Sunday night for dinner for corned beef and all the fixins (I ate all the fixins). Of course, I made more Irish soda bread and in traditional Irish fashion, a few pints of Guinness were had…and Bailey’s…and Jameson. OK, yes. We made Irish car bombs. They’re so fun!
After a few pints on Sunday night, I was craving some serious green detox smoothie action to whip me back into shape. I decided to keep in the shamrock spirit and create a superfood green smoothie for the holiday where you want ALL THE GREEN THINGS.
It turned out pretty delicious and the wheatgrass and maca powders are masked by the strong flavor of the fresh mint and potent cocoa nibs. And don’t fret if you don’t have the powders listed in the recipe. I tried the smoothie with and without and it tasted just as well without. You just get an added nutrition boost by adding them in.
Either way, this smoothie is antioxidant-packed with the kale and cocoa nibs and tastes like a thin mint. Yes, those delicious chocolate mint girl scout cookies that I store in the freezer because they’re ten times better cold. Try it. Trust me. The frozen thin mint that is. But first try the smoothie because St. Paddy’s Day only comes around once a year!
- 2 frozen bananas
- 2 cups kale, packed
- 3 tbsp cocoa nibs
- 2 tbsp hemp seeds
- 2 tbsp chopped mint, packed
- 1 tbsp maca powder
- 1/2 tbsp cocoa powder
- 1 tsp wheatgrass powder
- 2 cups coconut milk
- Add all ingredients, in the order listed above, to a blender. Blend until smooth. Serve cold.
- Optional: garnish with extra cacao nibs and mint leaves.
