First, the red velvet beet cupcakes. But that only covers dessert. I wanted to make a Valentine’s Day breakfast to start your day off on a red, festive note. And because we all deserve a little love in the morning to treat ourselves to a delicious, nutrient-packed breakfast. Plus, red velvet in the morning just sounded like the best idea ever. And if we’re being real, I had some leftover beets from the cupcakes that I needed to use up! If you’re making my cupcakes and you wind up with extra beets, you know what to do.

Not to be all sappy but this Valentine’s Day is a little more meaningful to me because it’s my first V-Day as an old married lady. I’m not going to lie I got a little excited going to buy a card for Steve this year because it meant I could buy one that said HUSBAND on it (it’s the little things in life, ya know?). 

Red Velvet Beet Smoothie BowlThis smoothie bowl is super easy to whip up – all you need are a few ingredients – bananas, beets, cacao powder, yogurt and coconut milk. BOOM. And then of course, all the red fruits, coconut whipped cream and cacao nibs if you want to make this an extra special breakfast (and you do). Beets are the perfect natural food dye. If you want to make anything turn red (pancakes, waffles, cookies, etc.), just add some beet puree! And watch your clothing while you’re at it. But beets have most recently been in the nutrition spotlight because of their nitrate content. Ingredients

Scale
  • 1 banana, sliced and frozen
  • 1 small beet, chopped, frozen (about 1/2 cup)
  • 1/4 cup vanilla Greek or Icelandic yogurt
  • 2 tablespoons cacao powder or chocolate protein powder
  • 1/4 cup coconut milk beverage (or more depending on desired consistency)
  • Optional toppings: strawberries, raspberries, coconut whipped cream, cacao nibs

Instructions

  1. In a high speed blender, blend banana, beet, yogurt, cacao powder and coconut milk until smooth. Add more coconut milk as needed.
  2. Optional: Top with strawberries, raspberries, coconut whipped cream and/or cacao nibs.
