Hi, friends! Over the next couple weeks while I’m away in Europe, I’m going to have some of my fav RD friends guest posting on the blog. I’m really excited for you to “meet” them all – you’re going to love them. We’re kicking off the guest posts today with my friend Anne from fANNEtastic Food. I met Anne a few years back at Blog Brûlée and was so impressed with how she built a blogging career for herself – she was definitely an inspiration for getting TFD off the ground a few years ago. Anne’s sharing some of her fav recipes for summer entertaining today, just in time for the last couple summer hurrahs! 
 

Easy Recipes for Summer Potlucks

Cantaloupe Avocado Soup – This chilled soup is creamy, light, refreshing, and surprisingly simple to make! Your guests will be impressed by how unique it is and how fresh and bright the flavors are. Blend the soup a day in advance and keep it chilled for an even easier start to your dinner party.Mediterranean Sweet Potato Hummus Bites – These little sweet potato rounds are my latest obsession. They’re so easy to make, yet so fun to eat! Tomatoes and basil are the ultimate summer flavor combination, and they really freshen up these sweet potato stacks. They’re the perfect dressed-up alternative to the usual chips and salsa before you dig into the main course!Lemon Avocado Hummus – This dip is like a cross between guacamole and hummus – and it’s so good. Just a few ingredients and a quick whirl in the food processor and you’ve got a rich and creamy, yet light and summery dip.Watermelon Rind Slaw – If you haven’t yet used the rind of your watermelon in a recipe, you’re missing out! The flavor is mild, but the texture is crunchy and refreshing, so it’s perfect for shredding into a slaw. Whip up this bright and flavorful watermelon rind coleslaw as a side dish or topping for grilled chicken, tofu, fish, or burgers.Cucumber Lime Basil Prosecco Spritzer – The light, refreshing flavors of cucumber, basil, and lime are perfect in a summer cocktail – and adding prosecco can never steer you wrong! Being pregnant right now means I miss prosecco dearly, so please have one for me! 🙂Roasted Salmon with Watermelon Salsa – This salmon is one of my all-time favorite summer main dishes. I love cooking fish in the summer because it doesn’t leave you feeling heavy and it cooks so quickly (the less time spent near a heat source in the summer, the better!). Roasting salmon is such a quick and easy cooking method, but you could easily grill it too! What makes this dish is the summery watermelon salsa. It’s crisp, refreshing, and so gorgeous!Greek Lamb Burgers – I first got the idea for Greek-themed burgers from a friend, and as it turns out adding chopped spinach, olives, feta, and sundried tomatoes into the ground meat makes for a seriously delicious combination. So flavorful, juicy, and savory – and if you’re not a lamb fan, these will work well with turkey (or beef) as well.greek lamb burgersJackfruit Carnitas – Delicious vegetarian options aren’t always plentiful when it comes to summer barbecues. I love getting creative with vegetarian entrees so that no one’s stuck eating a plain veggie burger while the meat-eaters have plenty of fun options. That’s where these jackfruit carnitas come in. They look (and taste) surprisingly like pulled pork, but they’re vegan and take just a few minutes to cook! Even my meat-eating friends have fallen in love with pulled jackfruit. Give this recipe a go for your next taco bar!Watermelon Rosemary Popsicles – when it comes to summer desserts, I’m not one to spend hours baking a pie or an elaborate cake; quick, easy, light, and refreshing is more my speed. These watermelon rosemary popsicles are the perfect cool-down for hot summer nights. They’re fruity, but not too sweet, and the rosemary adds an interesting earthy flavor that’s unexpected and totally delicious!A huge thank you to Kara for having me to share some of my end-of-summer favorites here today!
