Less than 2 weeks out from the Super Bowl and already my brain is thinking up delicious snacks and dips for the big game. Actually more like a month ago I was thinking about it cause…#bloggerproblems. But I’ll take any excuse to experiment with appetizers, snacks and dips. Because next to breakfast, my favorite meal of the day, snacks are a close second. And snacking still kinda has a bad rep but without merit. Snacks help keep our hunger in-check in-between meals and long stretches of not eating. They prevent us from very real HANGER. They prevent us from overating at our next meal and most importantly keep us satisfied.Healthy DIY Guacamole BarMy MO when snacking is to choose something that’s going to fill me up and leave me satiated, not something that’s going to make me feel hungry 20 minutes later. Guacamole is one of my favorite satiating snacks. Probably because I just love avocado (as evidenced by my avocado toast brunch selection today). Avocado is packed with healthy (monounsaturated) fats, not to mention a host of other vitamins and minerals. Plus, it’s freaking delicious. Especially when paired with lime and salt. And maybe a margarita. Just sayin.Healthy Guacamole BarWhich is why I was inspired to make a DIY guacamole bar for the Super Bowl this year. Because guac is great and all but how fun would it be if you could customize your own guac with all the toppings. That’s right I’m talking black beans, salsa, cojita cheese, corn, cilantro, mango, you name it. It’s super easy to throw together, especially if you buy pre-chopped veggies from the grocery store. I actually used Peapod to gather all my guacamole bar ingredients and it was super easy. DIY Healthy Guacamole Bar

Ingredients

Scale
  • 9 ripe avocados
  • 3 large limes
  • 1 1/2 teaspoons salt
  • Optional toppings:
  • 3 roma tomatoes, chopped
  • 1 red onion, chopped
  • 1 jalapeno pepper, minced
  • i bunch cilantro, chopped
  • 1 bag frozen mango chunks, defrosted and chopped (or use fresh if in season)
  • 1 container cojita cheese or crumbled goat cheese
  • 1 container salsa
  • 1 bag frozen corn, defrosted
  • 1 can black beans, rinsed and drained
  • 1 head garlic, roasted
  • Hot sauce or tomatillo hot sauce
  • Tortilla chips, for serving

Instructions

  1. Cut avocados in half, remove seeds and scoop out flesh into a large bowl. Mash avocados using a fork until you reach your desired level of smoothness. Add lime and salt and mix until combined throughout.
  2. Assemble your desired toppings into small bowls around the guacamole. Set aside a big bowl of tortilla chips, for serving.

Notes

To save leftover guacamole (and keep it from going bad), store in an airtight container and pour 1/2 inch of lukewarm water over the surface of the guac. Store in the refrigerator for up to three days and when you’re ready to eat, simply pour the water off.
