The perfect smoothie for summer! Sweet strawberries meet tart rhubarb for a refreshing beverage that’s reminiscent of strawberry rhubarb pie!

Strawberries and rhubarb are in-season right now (early summer) and what better way to celebrate than to combine the two into a cold, refreshing smoothie!

You guys know I’m a big fan of the strawberry rhubarb combination – I made a strawberry rhubarb galette last year and we had berry rhubarb pie at our wedding soooo yeah I’m here for it.

This smoothie is super easy to make. You only need several ingredients – most of which you should already have stocked in your pantry!

Perfect for a mid-morning snack or as part of your breakfast. 

Ingredients You’ll Need

oats, coconut milk, slivered almonds, vanilla, maple syrup, frozen strawberries, rhubarb, and a banana placed on a counter top

Notes on Ingredients

Strawberries: I like using frozen in this recipe because it helps make the smoothie cold without having to use ice which dilutes the flavor. If you want to take advantage of fresh strawberries this time of year, you can just wash, slice, and freeze them, like I did. Or, use fresh and then throw in a handful of ice cubes!

Almonds: I use slivered almonds here but any nut you have on hand (walnuts, pecans, etc.) will work just fine.

Coconut Milk: I used coconut milk beverage because it tastes less “coconut-y” than canned coconut milk.

How to Make Strawberry Rhubarb Pie Smoothie

Smoothies are SO simple to make. You throw your ingredients into a high-speed blender and blend baby! frozen strawberries, sliced banana, oats, and coconut milk placed inside of a blenderPro Tip: If you’re not using a high-speed blender, add the liquid to the blender first. This way it will help blend everything together without getting stuck.

Pour the smoothie into a glass and top it off with some nutty granola because it is a pie smoothie after all. 😉

Smoothie FAQs

Can I use fresh strawberries?

Yes! Try using frozen banana then and/or throw in a handful of ice to make it cold and refreshing.

I’m allergic to nuts – can I substitute them for something else?

You could add sunflower or pumpkin seeds or seed butters. Or, just leave them out!

Do I have to add the syrup?

You don’t have to do anything I suggest! Make this smoothie your own! I personally didn’t think it was sweet enough without the syrup, which is why I added it. I also used unsweetened coconut milk beverage. If I had used the original, it may have been sweet enough!

The perfect smoothie for summer! Sweet strawberries meet tart rhubarb for a refreshing beverage that’s reminiscent of strawberry rhubarb pie!


Ingredients

Scale
  • 1 cup frozen sliced strawberries
  • 1/2 cup chopped rhubarb
  • 1 small or 1/2 medium banana (1/2 cup sliced), ideally frozen
  • 1 tablespoon slivered almonds
  • 3 tablespoons rolled oats
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla
  • 1 cup unsweetened coconut milk beverage
  • Ice, as needed
  • Optional: nutty granola, for topping

Instructions

  1. Blend all ingredients until smooth. Blend in ice as needed.
  2. Optional: top with your favorite nutty granola.

Notes

  1. If you’re not using a high-speed blender, add the liquid to the blender first. This way it will help blend everything together without getting stuck.
  2. If you want to use fresh strawberries instead of frozen, use frozen banana then and/or throw in a handful of ice to make it cold and refreshing.
