Avocado Rose Toast 3 Ways

  • Lemon juice and olive oil for the avocado roses

For the Radish Toast:

  • 1 slice whole-wheat toast
  • 2 radishes, sliced
  • 1/2 avocado
  • 1/8 teaspoon ground pink peppercorns
  • 1/8 teaspoon salt

For the Smoked Salmon Toast:

  • 1 slice whole-wheat toast
  • 3 ounces smoked salmon
  • 1 teaspoon fresh dill
  • 1 teaspoon capers
  • 1/2 avocado
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

For the Fried Egg Toast:

  • 1 slice whole-wheat toast
  • 1 sunny side up egg
  • 1/2 avocado
  • 1/4 teaspoon red pepper flakes
  • 1/8 teaspoon salt

  2. Assemble the avocado roses and other ingredients on a slice of toast.


Be sure to squeeze lemon juice on the avocados to prevent browning. I used olive oil on my surface, knife and spatula to keep the avocado roses from sticking.
