No Bake Almond Joy Bars are the perfect way to jazz up the brown bag lunch. Gluten-free, dairy-free, and veg-friendly!
As summer begins to wind down and the mornings and evenings start to get slightly cooler, we know that back-to-school is just around the corner.
Cue the dreaded brown bag blues. It can be a big challenge for mom and dad to constantly have to reinvent the lunchbox, offering up new options that are both healthy and delicious to keep their kiddos (and themselves) satisfied.
The good news is this month’s recipe redux is all about the brown bag. We’re creating bars and bites that pack a whole lot of nutrition into a small square or round. Ditch the brown bag blues and get excited to jazz up your and your kiddos lunchbox this fall!
My boyfriend loves chocolate chip granola bars and I caught a box in our beach bag last week and took a glance at the nutritionals and thought I could do so much better than that.
And I did.
Believe me, all the kiddos at school will want to trade their snacks for this bar (assuming trading snacks is still a thing – it was when I was in school!).
And these bars are friendly for kiddos with allergies or food sensitivities – they’re gluten-free, wheat-free, dairy-free, and veg-friendly!

- Yield: 2 dozen bars 1x
Description
No Bake Almond Joy Bars are the perfect way to jazz up the brown bag lunch. Gluten-free, dairy-free, and veg-friendly!
Ingredients
- 1/2 cup coconut oil
- 1 cup almond butter
- 1/4 cup honey
- 6oz dark chocolate
- 2 cups gluten-free rolled oats
- 1/2 cup chopped toasted almonds
- 1/3 cup shaved coconut
- 1/2 tsp salt
Instructions
- Line a 9-inch baking pan with parchment paper.
- In a medium saucepan, heat almond butter, coconut oil, and honey over medium heat, stirring frequently, until melted and combined, about 3 minutes. Remove from heat.
- Add the remaining ingredients and stir until chocolate has melted and ingredients are combined.
- Store in the refrigerator overnight. Cut into 24 bars.
Don’t worry, I won’t judge if you snag a few for your own lunchbox. Secret’s safe with me.

Almond Joy Bars just happen to be my favorite 🙂 I used to love Halloween because my sisters hated them and I would get their trick or treating leftovers. I haven’t had one in years though because they are pretty horrible for you. These, however, are all the goodness with none of the chemicals! Love it.
