Haaaaaaapy hump day!

Here’s a round-up of my eats yesterday and despite blizzard #4 hitting us on Sunday, I managed to get some real food in the house on Monday.

Breakfast

Warm water with lemon.

2 sunny side up eggs and a slice of Go Veggie cheddar cheese on a whole-wheat English muffin.

Black tea with raw honey and lemon.

Lunch

Leftover Kimchi Stew – recipe from Bon Appetit and recommended by my future sister-in-law. This was SERIOUSLY comforting and delicious. Perfect for the snowy day we had here in Boston yesterday (yes, another one). And if you’re not a fan of kimchi, don’t swear off this recipe just yet. Steve wouldn’t go near a jar of kimchi with a 10-foot pole. This soup, however, he totally dug.

Dark Chocolate Raspberry Hemp Truffle to satisfy my sweet tooth. I’ve been storing these babies in the freezer and they still taste amazing.

PM Snack (before teaching yoga at BU)

Green tea with pomegranate

Peanut Butter and Jelly Lara Bar

Dinner

Slow-roasted salmon (recipe coming tomorrow!). Cheesy mashed cauliflower. Sautéed red kale.

  1. Kimchi stew sounds interesting! I am not a fan of kimchi, but I take your word! Need to go check that out.

  2. What a perfect day of eats – everything sounds delicious! I love that you’re including drink ideas. I need to get back on the tea wagon in the afternoons during this cold weather.

    My hot beverage treat today is mixing some fancy vanilla almond/oat milk I found on sale at Whole Foods into my coffee 🙂 Otherwise, quinoa muffin before my workout, eggs at work, lunch salad with a salmon cake and yogurt, and dinner is Vietnamese food out with friends!
