Haaaaaaapy hump day!
Here’s a round-up of my eats yesterday and despite blizzard #4 hitting us on Sunday, I managed to get some real food in the house on Monday.
Warm water with lemon.
2 sunny side up eggs and a slice of Go Veggie cheddar cheese on a whole-wheat English muffin.
Black tea with raw honey and lemon.
Leftover Kimchi Stew – recipe from Bon Appetit and recommended by my future sister-in-law. This was SERIOUSLY comforting and delicious. Perfect for the snowy day we had here in Boston yesterday (yes, another one). And if you’re not a fan of kimchi, don’t swear off this recipe just yet. Steve wouldn’t go near a jar of kimchi with a 10-foot pole. This soup, however, he totally dug.
A Dark Chocolate Raspberry Hemp Truffle to satisfy my sweet tooth. I’ve been storing these babies in the freezer and they still taste amazing.

Peanut Butter and Jelly Lara Bar
Slow-roasted salmon (recipe coming tomorrow!). Cheesy mashed cauliflower. Sautéed red kale.
