Edamame Hummus

Ingredients

  • 1 1/4 cup shelled edamame
  • 1/4 cup tahini
  • 1/4 cup water
  • Juice of 1/2 lemon
  • 2 garlic cloves
  • 3 tbsp olive oil
  • 1/4 tsp cumin
  • Salt and Pepper to taste

Instructions

  1. Puree all ingredients in a food processor until smooth.
  2. Spread on pitas, rice cakes, crackers. Or, use it as a condiment on a sandwich. Edamame hummus would taste great on a grilled veggie sandwich.
