Happy hump day!
Welp, we sure got a blizzard in Boston yesterday. I didn’t mind it so much though. One, I got to stay warm and cozy and develop recipes all day. Two, Steve got to work from home too and was nice to have some company during the work day for a change (no offense, Constantine).
Here’s a lineup of my Wednesday eats:
Steel cut oatmeal (made with coconut milk) topped off with walnuts, chia, and cinnamon. Satsuma on the side.
Black tea with honey & lemon.
Parsley, lemon and cannellini bean salad via Ottolenghi’s Plenty More. Made with red quinoa and lots of fresh herbs like parsley and cilantro, this bright grain salad was perfect to make at the beginning of the week and lasted me for lunch all week.
Ottolenghi overload warning. Yes, I made two of his recipes in one week. This one, we had for dinner – Legume Noodle Soup. It was an Iranian inspired soup made with turmeric, beans, noodles, lime and sour cream. I loved it. Steve, not so much. Maybe it was the bright neon yellow color that turned him off. That, or the fact that my cutting board is now forever stained yellow. #messycook
