I’m popping back on the blog today amidst my Barcelona travels to share a delicious summer treat with ya’ll.
Have I mentioned lately that popsicle molds are a life changer? Because they are. If you don’t own a popsicle mold, go out and get yourself one before you deprive yourself one more summer without them. I just got popsicle molds this year and I’m all like “where have you been all my life?” This summer is going to be the BEST yet because it will be filled with homemade popsicles galore. And obviously the presence of ice pops is the one and only gauge of a good summer. 😉
Plus popsicles are the best healthy summer treat because you can make a million and one variations. All you gotta do is essentially blend your favorite fruit with some yogurt, milk, , non-dairy beverage, or coconut water, and voila you’ve got a mix fit for a popsicle mold!
These roasted peaches and cream popsicles are my latest creation for Food Network’s Healthy Eats Blog. Roasting the peaches boosted their flavor and sweetness and the regular plain greek yogurt is so rich and creamy it might as well be ice cream. Except that it’s healthier for you. Win!
