No Bake Mini Gingerbread CheesecakeCheesecake was my favorite kind of cake growing up. In fact, every year on my birthday, my family would get two cakes – a yellow or chocolate cake for the normal birthday party goers and a mini cheesecake for moi. And the holidays weren’t any different. While everyone would be noshing on holiday classics like apple pie and Christmas cookies, I was digging into that cherry cheesecake.

 No Bake Mini Gingerbread Cheesecake

So, I’m bringing cheesecake back to the holidays with a seasonal gingerbread version.

These mini cheesecakes are perfectly portioned, super easy to make, and don’t require an oven. I used Neufchatel cheese, which contains 1/3 less fat than cream cheese, and low-fat Greek yogurt for the creamy, better-for-you filling.

Serve these up at the holidays alongside your holiday cookie platter and they’re sure to be a hit.
