I’ve been busy in the kitchen creating new holiday recipes, celebrating my birthday in Nashville, and attending the Food and Nutrition Conference & Expo, also in Nashville.

Steve and I had a pretty awesome time eating and drinking and jamming our way through the music city. We had delicious dinners at Husk and Rolf & Daughters. Awesome veg-friendly lunch at The Wild Cow, and a rich Southern biscuit breakfast at Biscuit Love.

My birthday dinner at Husk was incredible.

Shrimp & grits. And yes that’s a runny egg yolk in the middle. Best shrimp & grits of my LIFE.

Then there was breakfast at Biscuit Love. Bonuts are my new favorite indulgence. Fried biscuit dough with blueberry compote and lemon marscapone. Bonuts > Donuts.

Can’t forget about our delicious small plate dinner at Rolf & Daughters. The heirloom tomato with house ricotta was unreal.

But I digress. Today I’m sharing my love of all things apple. Apples are in season right now and I can’t get enough. I especially love apple desserts in the fall. Apple pie and crisp are two of my favorites and my Mom’s apple pie recipe will always and forever be the best. She makes it so the apples are super tender (I hate hard apples in pies!).

But here’s my beef with apple pie – it takes so dang long to make! Rolling out the dough. Waiting for the oven to preheat. Waiting for the pie to bake. And let’s be real, time is always of the essence. So today I’m sharing a super easy recipe for no bake caramel apple pie bars that require just a few simple steps using the good ol’ microwave.
