Vegify Your Chili!

Well, here it is, the last recipe to complete my self-quota for the week! 4 recipes in 7 days. Phew! From now on I think I will set a more realistic goal, one new recipe every week. The realistic goals we set for ourselves are usually the ones we can maintain, right?!

Today I am going to share with all of you a chili recipe. A very healthy one in fact. This vegetarian chili recipe calls for tofu as a meat substitute. Some vegetarian chili recipes call for beans only as a protein source; however I love the tofu addition because it adds more substance and makes it taste heartier.

If you’re used to beef in you chili, don’t be afraid to try tofu instead! It mimics the texture of meat and absorbs the flavor of the chili. PLUS one serving of this tofu chili is only 280 calories and only 1.5 grams…

Pumpkin. It’s what’s for dessert.

If there’s one thing you should know about me, it’s that have a pretty serious sweet tooth. That’s right. I said it. I LOVE DESSERT.

I know what you’re thinking…”but that’s not healthy!” That may be true…BUT everything in moderation is fine! Plus, I am a food lover not a fighter! I would never deprive myself of any type of food; I just won’t have it on a daily or weekly basis!

Having said that, don’t be scared to try this delicious recipe I’m about to share. Share it with your family and friends if you’re worried about eating it all and consuming all the calories by yourself! Which could be done since it’s that good!

Tempeh..temp-huh?

Hello there!

Recipe numero dos is another vegetarian dish. So I feel the need to tell all of you out there that I do follow a semi-vegetarian diet. If we wanna be fancy about it, we can call me a pescetarian! I am a vegetarian who eats seafood. I also eat dairy and eggs. While this is the lifestyle I choose to follow, I am not here to convert anyone to vegetarianism. Having said that, a majority of the recipes I share will be vegetarian. But good news! You don’t have to be a herbivore (plant-eater) to enjoy some tofu every once and a while! Plus, there are some health benefits to being a vegetarian or eating vegetarian occaisonally, including lowering your risk of heart disease! So listen up and let me tell you a little bit about tempeh!

I am excited to finally take a dive into the fast-growing, ever-so-popular blog scene. But I am even more thrilled to share delicious (mostly healthy, I mean we all need to indulge a little bit now and then) recipes and my food-for-thoughts.
